Does installing a K&K mini have any negative impact on the acoustic sound when not using the pickup?
It seems like anything that is attached would have some influence on the overall sound, but perhaps it’s negligible and you can’t tell – or is there evidence that the effect is noticeable?

I have had K&K in 2 guitars. No problems at all. Butch Boswell told me I would get better sound with the Baggs Anthem in my SCGC Dread Cutaway
The band members preferred the sound of the K&K.
Neither system affected the unamplified sound of the guitars.

this is pretty deep in the science weeds, we’d have to take the same guitar and measure it’s sonic quality with and without the pickup. I would put good money on the fact that there is no difference. You might also look at what Lloyd Baggs has to say on this, he’s my go to pickup genius

The real voice of the guitar is around the bridge. I don’t like to make changes in mass around the bridge and I certainly don’t like the impact of an under saddle pickup. But, just having small pads glued to the bridge plate or a mic pickup around the side of the rosette (where vibrational transfer is less important) is not something that concerns me.
All that said, I really dislike the sound of acoustic pickups compared to a mic in front of the instrument so I’ll always choose a mic when afforded the opportunity.

Mic is by far the best choice. That and a great room, hard to go wrong
