Adi/ hhg bracing vs spruce / titebond bracing

I have the pleasure of owning several different Santa Cruz guitars, most of which are custom builds and have the Adirondack spruce bracing and the hide glue package. I also have two that have spruce bracing with titebond. I realize that sound and tone are “a sum of all things”  but my question is- what advantages or voicing advantages does spruce and titebond have over the Adirondack/ hhg packages -if any? If spruce and titebond are inferior to adi/ hhg bracing why not make all guitars with this option even though it would cost more? Thank you in advance for any input!
